Stand out vanilla and chocolate shortbread spirals
If you want to make some biscuits that will really stand out from the crowd why not try this pinwheel cookies recipe? With a little time and patience you will produce some striking chocolate and vanilla shortbread spiral that will have everyone licking their lips!
To make your pinwheel cookies, you will need the following ingredients:
- 2 tablespoons of cocoa powder
- 1 tablespoons boiling water
- 200g of butter
- 300g of plain flour
- 100g of caster sugar
- 1 tsp vanilla essence
- baking paper
1 – Set the oven to 160C/325F/Gas Mark 3. Put the cocoa powder into a mug and mix with the boiling water until smooth.
2 – Cut the butter into small pieces on a plate then put it in a mixing bowl with the flour and sugar. Rub the butter into the flour mixture with your fingertips to make tiny crumbs, or use an electric mixer.
3 – Spoon half the cookie mixture into another bowl, add the cocoa paste to one half and the vanilla essence to the other. Squeeze the crumbs and cocoa paste together with your hands and form an evenly coloured dough. Wash your hands and repeat with the remaining crumbs and the vanilla essence – add a little flour if the dough is too sticky.
4 – Roll out the cocoa dough between 2 sheets of non-stick baking paper to make a 20cm (8 inch) square. Do the same with vanilla dough, using another 2 sheets of non-stick baking paper. Peel the top baking paper off each piece of dough. Put the cocoa dough on top of the vanilla dough so that the base paper you were rolling out on is now on top. Peel this off then roll up the two layers of cookie mixture in a long roll, peeling away the other sheet of paper as you go. Chill for 15 minutes in the freezer or an hour in the fridge.
5 – Cut the roll into 16 thick slices. Place on an ungreased baking sheet and cook for 8 to 10 minutes. Leave the pinwheel cookies to cool on the baking sheet before eating. Truly delicious by themselves or served with ice cream and fruit!
