An easy chocolate brownies recipe that kids can help with too

Gooey, rich chocolate brownies are the perfect indulgent tea-time treat. With this easy chocolate brownies recipe you will produce deliciously chocolatey brownies – but with a third less calories than found in many recipes. So you can have your cake and eat it – or at least in moderation! These light treats are easy to make with store cupboard ingredients and the recipe is perfect for busy people, anyone baking with kids and of course chocolate lovers!

To make 12 chocolate brownies you will need:

  • Oil or butter to grease the dish
  • 85g (3oz) of plain flour
  • 1/2 teaspoon of bicarbonate of soda
  • 25g (1oz) of cocoa powder
  • 100g (4oz) of caster sugar
  • 50g (2oz) of light muscovado sugar
  • 85g (3oz) of dark chocolate – 70% cocoa solids recommended
  • 1/2 teaspoon of instant coffee granules
  • 1 teaspoon of vanilla extract
  • 2 table spoons of cream or plain yogurt
  • 1 large egg, beaten
  • 100g (4oz) of mayonnaise – it seems a little strange to put mayonnaise in brownies but it works perfectly


  • Preheat the oven at 180ºC, 350ºF, Gas Mark 4. Lightly butter or grease a square 19cm cake tin and line it with baking paper
  • Melt the chocolate and allow to cool
  • Mix the flour, cocoa powder and bicarbonate of soda
  • Stir both sugars, the coffee, vanilla and cream into the cocoa powder. Add a tablespoon of warm water
  • Beat in the egg and mayonnaise until you have a smooth, glossy mixture
  • Gently fold in the flour mix
  • Spread the mixture in the baking tin and bake for 30 minutes
  • Leave until cold and loosen the sides with a knife. Turn over, remove the lining paper and cut into 12 square brownies

If you’re baking for a party you could cut the brownies into small bite size squares. Enjoy!
