Chocolate chip cookie in a cup – a tasty microwave recipe

Our cookie in a mug is a perfect emergency pudding or afternoon treat. It’s ideal if you’re just baking for one too – it will save you eating a whole batch of cookies by yourself.
Kids are sure to go mad over this chocolate chip cookie in a cup. It’s easy to make too so they can make their own!
I tried this recipe with my children on a rainy afternoon and the cookie disappeared before I could try it. The recipe would work well with a small group of children as each child can make their own cookie in a mug.
You can mix and microwave everything right in a tea mug – just make sure it is microwave safe. Your cookie will be ready to eat in less than 5 minutes!
To make your chocolate chip cookie in a mug you will need the following ingredients:
- 1 Tablespoon butter
- 1 Tablespoon sugar
- Tablespoon of firmly packed dark brown sugar
- Drops of vanilla extract
- A small pinch of salt
- 1 egg yolk
- Just under 1/4 of cup of plain flour
- 2 tablespoons of chocolate chips or chopped up chocolate
Using your mug, melt the butter in the microwave for 20 seconds (make sure not to overheat and boil the butter)
Stir in the sugars, vanilla and salt
Stir in the egg yolk, then the flour and finally the chocolate chips. Now your mixture will look like cookie dough.
Cook in microwave for 40 to 50 seconds depending on your microwave. Your cookie will continue to cook as it cools, so don’t overdo it! If the cookie is dry or cake like, reduce the cooking time next time.
Served warm, it’s delicious with ice cream.
